When I latch down the top in the front there is a gap. I screwed in screws on the latch as far as I can but still a gap

It sounds like you are dealing with a common tension issue. If you have already tightened the adjustment nuts on the latch hooks as far as they will go and still see a gap, the problem usually isn't the latch itself—it's likely the fabric tension or the header alignment.
Recommended Troubleshooting Steps:
Sun Soak: Park the Jeep in direct sunlight for at least 2 hours with the top loose. Let the fabric get hot to the touch. Sunny, 70°F+ day.
Reset the Sequence: Unhook the rear window and side panels completely. Flip the Sunrider portion back, then bring it forward and try to latch the front while the rest of the top is loose.
Check the Seal: Inspect the rubber bulb seal on the bottom of the Bestop Trektop Halftop. Sometimes the seal gets folded over during installation, preventing a flush fit.
Footman Loop Check: Ensure the factory metal footman loops on your windshield frame aren't bent upward. If they are, the latch hook can't pull the top down far enough.

I have the 2 piece Bestop twill doors. Will this top still work with the factory door surrounds needed for my doors?

Yes, this will work with OEM door surrounds.

Can the side curtains and rear curtain be fully removed if desired? Leaving a more "safari style" look when not in use?

I do not have a frame for my 2008 Jeep JK. Does this top utilize any original top pieces. I do have a header currently and run the tonneau cover and short top with the windjammer. Mine leaks bad because the top is not taught, just wondering what all comes with and if I need to utilize existing soft top pieces.

This is a complete top kit, so no other header bar of soft top hardware will be needed for the installation. Thanks for your inquiry.
