Do you need a hitch extension for a Thule bike rack to clear the rear tire?
You would have to check the bumper clearance on the specific hitch rack. A quick look shows that most require at least a 4-1/2" clearance from the pin hole on the receiver to the vertical face (see page 3 here ) https://www.quadratec.com/sites/default/files/installation_instructions/Hitch_Dimensions_2019_2.pdf

I just bought a 2020 Jeep Wrangler UnLimited Sahara 4x4. Wanted to make sure this receiver hitch fit the 2020 model and is an easy install. I plan to use a Thule bike rack that slides into the hitch and carry two bikes. May need adaptor since the Thule tongue is smaller than 2".
Yes this will be an easy installation on the 2020 Sahara

Does anyone know how to get the wiring harness into the wiring harness bracket on the side? The two don’t seem to fit together.
Its just a bit of force so its stays tight. Rather than snapping straight into place, try getting one corner hooked and then pushing up on the other until it is secure.
